CC's Sawdust Pie
Don't let the title stop you from baking this pie recipe. The "sawdust" is a mixture of graham cracker crumbs, pecans, and coconut mixed with egg whites and sugar that becomes a sweet and chewy filling when baked.

Ingredients

7 egg whites

1-1/2 cups sugar

1-1/2 cups graham cracker crumbs

1-1/2 cups pecans, coarsely chopped

1-1/2 cups shredded coconut

1 9-inch unbaked pie shell
-
Whipped cream, banana slices, mint
Directions

Heat oven to 325 degrees F.

In a large bowl, mix egg whites, sugar, graham cracker crumbs, pecans and coconut. Stir until well combined.

Pour mixture into unbaked pie shell. Bake at 325 degrees F for 38 minutes or until glossy and set. Remove from oven; cool completely on a rack. Once pie is cool, top with whipped cream, banana slices and a sprig of mint, if desired.
