Carousel Cake
Decorate animal cookies then place them on candy sticks so they can ride the carousel on top of this colorful party cake.

Ingredients

Decorated Animals:

1/2 recipe royal icing (recipe on www.parents.com)

Black, blue, brown, grey, orange, and yello food coloring

Animal crackers
-
Cake:
-
1 box (18-1/4 ounces) cake mix, any flavor

2 cans (12 ounces) soft whipped white frosting
-
Green, orange, and yellow food coloring
-
Green, orange, and yellow jelly beans
-
Orange candy sticks
-
Paper canopy (see note, below)
Directions
1.
Prepare royal icing following directions for thinning to consistency of heavy cream. Divide icing among seven small bowls. Tint one bowl each black, blue, brown, grey, orange, and yellow. Leave one white. Decorate animal crackers. Let dry completely. (This can be done a day ahead.) Store cookies in an airtight container.

Prepare cake mix according to package directions for baking two 8-inch round cakes.

Divide 1 cup frosting among three bowls. Tint one bowl green, one orange, and one yellow. Place each frosting in a resealable plastic bag, and snip off one corner. Place one cake layer on serving plate; spread with 1/2 cup white frosting; top with remaining cake layer. Frost entire cake with remaining white frosting. Alternating colors, pipe stripes of colored frosting on side of cake. Place jelly beans along bottom of cake. Insert candy sticks on top of cake and attach animal crackers. Top with canopy.
Note.
To make canopy: Trace around a dinner plate on heavy paper. Cut out circle, then make a cut from the edge to the center of the circle. Overlap edges, securing with glue, to make cone.
