Carol Thomas's Pecan Pie
With a purchased piecrust and a five-ingredient filling, this may be the easiest pecan pie recipe you'll ever make.

Ingredients

1 ready-to-use rolled-out piecrust

1/2 cup butterscotch chips

1 cup pecan pieces

1/2 stick (1/4 cup) unsalted butter, melted

1/2 cup sugar

1/2 cup white corn syrup

2 eggs
Directions

Heat oven to 350 degrees F.

Unfold piecrust; fit into 9-inch pie pan. Scatter butterscotch chips and pecan pieces in pie shell.

Beat together butter, sugar, corn syrup and eggs in medium-size bowl. Pour over nuts and butterscotch chips.

Bake in 350 degrees F oven for 45 to 50 minutes or until golden brown. If pie browns too quickly, cover with aluminum foil after 20 minutes. Cool pie completely on wire rack.
