Caribbean Salad

Shrimp, blood oranges, and papaya in this salad recipe are a delicious tropical trio. The bonus? This dish is low in calories and fat.

Ingredients

4blood orangessee savings

1/3 cuplow-fat mayonnaise dressingsee savings

3 tablespoonsblood orange juicesee savings

-
1 tablespoonseeded and finely chopped jalapeno peppersee savings

-
2 teaspoonslemon or lime juicesee savings

-
1/8 teaspoonchili powdersee savings

-
6 cupstorn mixed salad greens or lettucesee savings

-
1papaya or mango, peeled and slicedsee savings

-
12 ouncesshrimp in shell, cooked, peeled, and deveinedsee savings

Directions
1.
Finely shred 1 tablespoon peel from blood oranges. Stir together mayonnaise, orange juice, the reserved blood orange peel, jalapeno pepper, lemon or lime juice, and chili powder; set aside.
2.
Peel and thinly slice blood oranges. Divide greens among four plates. Top with shrimp, blood orange slices, and papaya or mango. Serve with dressing. Makes 4 servings.
