Caramel Popcorn

  • 6 quarts freshly popped popcorn
  • 1 cup butter
  • 2 cups firmly packed brown sugar
  • 3/4 cup light corn syrup
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
Directions
1. 
Preheat oven to 250 degrees F.

Place popcorn in a large roasting pan. Set aside.
3. 
Melt butter in a large saucepan over low heat on stovetop. Add brown sugar and corn syrup. Bring to a boil over medium heat, stirring constantly. Boil 5 minutes, stirring occasionally. Remove from heat.

Add salt, soda, and vanilla; stir. Pour mixture over popcorn, stirring until popcorn is coated.

Bake for 1 hour, stirring every 15 minutes. Remove from oven. Pour popcorn onto waxed paper, gently separating with a spoon. Cool completely. Store at room temperature in airtight containers.
