Cajun Fish Soup
Stir-fry veggies and the kick of Cajun seasoning start this delicious seafood meal. Add tilapia and tomatoes and this 20-minute soup is done.

Ingredients

4 cups Stir-fry vegetables of your choice

4 cups Reduced-sodium chicken broth

2 teaspoons Cajun seasoning

12 oz. Tilapia, sliced

1 can Tomatoes, diced
Directions
1.
Combine 4 cups stir-fry veggies, 4 cups reduced-sodium chicken broth and 2 tsp. Cajun seasoning; bring to a boil.

Cover and simmer 4 minutes.

Add 12 ounces sliced tilapia (try to buy thickest pieces available) and one 14 1/2-ounce can diced tomatoes. Cover and simmer 3 minutes. Makes 4 servings.
