Butterscotch Oatmeal Cookies

Ingredients

1 cup butter, softened

1-1/4 cups firmly packed brown sugar

1/2 cup sugar

2 large eggs
-
1 tablespoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt
-
2-1/2 cups quick-cooking oats, uncooked

1 (11-ounce) package butterscotch morsels

1/2 cup finely chopped pecans
Directions

Preheat oven to 350 degrees.

In a large bowl, combine butter and sugars. Beat at medium speed with an electric mixer until fluffy. Add eggs, beating well. Add vanilla, beating until blended.

In another bowl, combine flour, soda, and salt. Gradually add to butter mixture, beating at low speed until blended. Stir in oats and remaining ingredients.

Drop by rounded teaspoonfuls onto lightly greased baking sheets.
5.
Bake for 8 to 10 minutes, or until lightly browned. Transfer to wire racks to cool.
