  • 2  cups  all-purpose soft-wheat flour (such as White LilyŽ)On Sale
  • 1/2  teaspoon  saltOn Sale
  • 1/2  teaspoon  baking sodaOn Sale
  • 1/4  teaspoon  baking powderOn Sale
  • 5  tablespoons  lard or shorteningOn Sale
  • 7/8 to 1  cup  whole buttermilkOn Sale
  • 1/2  cup  shredded Cheddar cheeseOn Sale
  • 1/4  cup  butter, meltedOn Sale

Directions

Preheat oven to 500 degrees F.

Sift flour, salt, baking soda, and baking powder into a bowl. Add lard or shortening and mix in with fingers until mixture resembles coarse crumbs. Add cheese. Add 7/8 cup buttermilk, stirring to combine. If dough seems dry, add remaining buttermilk.

Shape dough into a ball and knead lightly for 10 strokes.

On a floured surface, roll out dough into a rectangle to approximately 1-inch thickness. Using a biscuit cutter, cut out biscuits without twisting and place on a baking sheet.
5.
Bake for 8 minutes, or until biscuits are golden brown. Brush hot biscuits with melted butter.
