Bulgur Stuffing
From: Better Homes and GardensBulgur, a quick-cooking form of whole wheat, is high in nutritional value. It adds a nutty flavor to this healthy recipe that can be used to stuff a turkey.

Ingredients
1-1/2 cups bulgur
1-1/2 cups chopped onions (3 medium)
1 cup sliced celery
1/4 cup margarine or butter
1-1/2 cups snipped dried apricots
1 cup raisins
1/2 cup chicken broth
1 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/8 teaspoon ground cloves
1-1/2 cups chopped walnuts
1/4 cup orange liqueur or orange juice
Directions
1. Cook bulgur according to package directions; set aside. In a large skillet cook onions and celery in margarine or butter till tender but not brown. Add apricots, raisins, chicken broth, cinnamon, coriander, cumin, and cloves. Bring to boiling; reduce heat. Cover and simmer for 10 minutes, stirring the mixture occasionally.
2. Transfer to a large mixing bowl. Add cooked bulgur, walnuts, and orange liqueur or orange juice. Toss lightly to combine.
3. Use to stuff one 10- to 12-pound turkey. (See roasting chart for doneness temperatures of turkey and stuffing.) Place any remaining stuffing in a covered casserole; chill. Bake, covered, alongside the turkey for the last 30 minutes of roasting time or till heated through. Makes 10 cups (12 to 14 servings).
