  • large onion, thinly sliced

    ketchup

  • 2  tablespoons
    red wine vinegar

  • 2  tablespoons
    Worcestershire sauce

  • 1/2  cup
    dark brown sugar

  • 1/2  cup
    crushed canned pineapple

  • 1/4  cup
    mango or guava juice (optional)

    liquid smoke

Directions
1.
Preheat oven to 350 degrees F. Place ribs in a large roasting pan. Salt and pepper thoroughly and top with bacon and onions.
2.
In a medium bowl, combine ketchup, vinegar, Worcestershire sauce, brown sugar, pineapple, mango juice, liquid smoke, and water. Pour sauce over ribs.
3.
Cover with foil, and bake for 2 1/2 to 3 hours. Finish off on the grill to caramelize the outside.

Serving Suggestions
Bake ribs ahead of time and finish off on the grill at the game.
