Bruschetta with Two Toppers
Make this appetizer recipe two different ways. One way features arugula, artichokes, and Brie. The other showcases fennel, plum tomatoes, and capers.

Ingredients

2 8-ounce loaves baguette-style French bread

Olive oil or butter-flavor nonstick cooking spray

1 recipe Arugula and Artichoke Topper

3 ounces Brie cheese (rind removed if desired), thinly sliced

1 recipe Fennel and Tomato Topper

3 tablespoons finely shredded Parmesan cheese
Directions

Preheat oven to 425 degrees F. Diagonally cut each baguette into 20 slices. Lightly coat both sides of each slice with nonstick cooking spray. Place on two large baking sheets. Bake for 5 to 7 minutes or until crisp and lightly browned, turning once.

Place Arugula and Artichoke Topper on half of the toasted baguette slices. Arrange on large baking sheet. Top each with a small slice of Brie. Bake for 2 to 3 minutes or until cheese begins to melt.

Place Fennel and Tomato Topper on remaining bread slices. Arrange on another large baking sheet. Sprinkle with Parmesan cheese. Bake for 2 to 3 minutes or until heated through. Makes 40 bruschetta pieces.
Arugula and Artichoke Topper
In a small bowl, combine 1/2 cup finely shredded arugula; one 6-ounce jar marinated artichokes, drained and chopped; and 1/4 cup finely chopped green onion. Add 1 tablespoon white balsamic vinegar and 1 tablespoon olive oil. Toss lightly to evenly coat.

Fennel and Tomato Topper
Coarsely chop 1 medium fennel bulb. In a small skillet, cook chopped fennel in 1 tablespoon hot olive oil until tender. Remove from heat. Finely chop 2 plum tomatoes; stir into fennel mixture along with 1 tablespoon drained capers and 1/4 teaspoon cracked black pepper.
