Broiled Hot Wings with Celery Fennel Apple Slaw
Broiling gives the chicken wings a crisp texture without frying. The spicy blue cheese slaw adds a cool and tangy flair to the hot and spicy wings.

Ingredients

1 container (8 oz.) plain low-fat yogurt

1/2 cup (2-1/4 oz.) crumbled blue cheese

2-1/2 tablespoons cider vinegar

2 tablespoons plus 1/2 teaspoon Tabasco sauce

1 tablespoon sugar

7 medium radishes, cut into thin matchsticks

3 large celery ribs cut into 2-1/2-inch-long matchsticks

1 small fennel bulb, halved, cored, and cut into thin slices

1 large Granny Smith apple, halved, seeded, and cut into thin matchsticks

4 pounds chicken wings, wing tips discarded

3 tablespoons unsalted butter
Directions

Whisk yogurt, cheese, 1/2 tablespoon vinegar, 1/2 teaspoon Tabasco, and the sugar together in a large bowl; salt and pepper to taste. Add vegetables and apple, tossing to combine; chill, covered, 15 minutes.

Preheat broiler. Rinse and pat chicken dry. Arrange on lightly oiled rack in broiled pan in a single layer; season with salt and pepper. Broil chicken, turning, until golden brown on both sides, about 10 minutes.

Meanwhile, heat butter with remaining 2 tablespoons vinegar and Tabasco over moderate heat, stirring, until butter is melted, about 2 minutes.

Transfer chicken to a large serving bowl and toss with butter mixture until well coated. Serve with slaw. Makes 6 servings.
