Braised Seasoned Brussels Sprouts

8 ouncesBrussels sprouts, halved (2 cups)see savings

1/3 cupchicken broth or vegetable brothsee savings

2 teaspoonsgrated fresh gingersee savings

1/4 teaspoonsaltsee savings

1dried Thai red chile pepper, crushed, or 1/4 teaspoon crushed red peppersee savings

1 tablespooncoarsely chopped cashews or peanutssee savings

2 teaspoonssherry vinegar or red wine vinegarsee savings

Directions

Lightly coat a medium saucepan with cooking spray; heat saucepan over medium-high heat. Add mustard seeds, cumin seeds, and fennel seeds; cook and stir for 30 seconds. Add Brussels sprouts, chicken broth, ginger, salt, and crushed red pepper.

Bring to boiling; reduce heat. Cover and simmer for 10 to 12 minutes or until Brussels sprouts are tender, stirring occasionally. Stir in nuts and vinegar. Makes 4 servings.
