Braised Baby Artichokes

    baby artichokes, trimmed

  • 1/2 cup
    lemon juice

  • cloves garlic, thinly sliced

  • 1/2 teaspoon
    salt

  • 1 1/2 pounds
    tomatoes, seeded and diced

  • 1/2 cup
    sliced toasted almonds

Directions

Heat oil in skillet over medium heat. Add artichokes. Add lemon juice and garlic when artichokes begin to sizzle, then season with salt. Reduce heat to medium-low, cover, and simmer artichokes 15 minutes.

Uncover pan, and add tomatoes. Simmer 5 to 10 minutes more, or until mixture thickens and most of tomato liquid has evaporated. Season with salt and pepper, and sprinkle with toasted almonds. Serve warm or at room temperature.
