Boursin Mashed Potatoes

Ingredients
3 cups red potatoes, washed and cut into 1- to 1 1/2-inch pieces
2 tablespoons unsalted butter
1/2 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
1/2 cup garlic-and-herb-flavored cheese, preferably Boursin*
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
Directions
1. Place potatoes in a saucepan with enough water to cover. Bring to a boil over high heat. Reduce heat to medium. Cook for 15 minutes, or until potatoes are fork tender. Drain potatoes.
2. With a potato masher, mash potatoes until half of potato chunks are smooth. Add butter and cream, mashing until smooth.
3. Add salt, pepper, cheese, and herbs, stirring until well blended.
