Blue Cheese and Bacon Mashed Potatoes Au Gratin

A delicious blue cheese and bacon potato dish with a crunch on top.

see savings1/2 cupSmithfield Bacon, cooked and crumbled
see savings7medium-sized potatoes (slightly over 2 lbs), peeled and quartered
see savings6 tablespoonsunsalted butter
see savingsSalt and freshly ground black pepper, to taste

see savings4 ouncesblue cheese, crumbled
see savings1/4 cupfine bread crumbs
Preheat the oven to 400 degrees F. Cook the potatoes in boiling water until tender. Drain and dry over heat in the pan.
Spoon the potato mixture into a shallow prepared baking dish. Sprinkle evenly bread crumbs. Bake until heated through and golden on top. Or, if the potatoes are still very hot, place under broiler until golden brown.
