If you like to cook vegetarian, you may think there’s nothing easier than tossing a frozen veggie burger in the microwave, and — we’re not going to lie: there probably isn’t. But those frozen veggie burgers have a tendency to taste, well, like frozen veggie burgers. Why not compromise? These Southwest Veggie Burgers are a breeze to whip up (essentially, you just throw most of the ingredients into your food processor), yet they have a fresh and spicy flair. Topped with chopped tomato and homemade guacamole (and served with or without a bun), they can be on the table and ready to enjoy in just under 30 minutes.
