Turkey Pot Pies and Casseroles: Leftover Logic
There’s nothing worse than running out of turkey at the big Thanksgiving meal, which is why most of us are left with a few pounds of roasted bird come Black Friday. This year, instead of defaulting to sandwiches or soup, get creative with your stash. Turkey leftovers are a perfect addition to pot pie and casseroles, and you’ve already got a leg up on the recipes, since your turkey is roasted and ready to go.
These pretty little pot pies are tailor-made for Thanksgiving leftovers: they not only call for turkey, but leftover green-bean casserole and gravy, too. They’re topped with store-bought puff pastry, but if you’re feeling a little more ambitious, check out this biscuit-topped turkey pot pie (above). The flaky biscuit crust covers a creamy mix of veggies, turkey, and herbs.
Or go with a casserole. Because you can pack a lot of flavor into a one-dish meal, there are plenty of options. This tomato-basil turkey casserole has got plenty of zesty Italian flavor, or try a Tex-Mex Southwest turkey bake (green chiles give it just enough kick). This sophisticated turkey amandine is easy to make, but fancy enough for entertaining (if you can face the thought of guests again!).
