Corn Chowder: A Warming Thanksgiving Starter

Seven years ago my husband became a vegetarianThanksgiving hasn’t been the same since.

 

The first year was challenging, but by the second year I realized that his vegetarianism could have an amazingly positive impact on our Thanksgiving table.  Instead of relying on “typical” go-to Thanksgiving favorites, we simply needed to start thinking outside the bird! Starting with corn recipes.

 

The past few days, my first-born has been helping me find daddy-friendly recipes for our upcoming holiday feast.  He gets full credit for suggesting we try out this easy corn chowder recipe to see if it would be a good addition to the table.

 

I love when a Thanksgiving meal starts with soup—it’s warm and cozy and can be served while the rest of the meal is warming in the oven. It’s especially great when you’ve got vegetarians at the table.

 

We replaced the chicken broth with veggie broth, traded whole milk for low-fat, and, of course, we skipped the bacon.  The result was one very happy daddy, one very proud son, and a couple of gals (me + the baby) who are excited to cook up a giant pot for the whole family on Thanksgiving day.

 

Having a vegetarian Thanksgiving? We’ve got plenty of veggie side dishes, from garlic mashed potatoes to a new way to cook green beans.

    Seriously? Whether or not your Vegitarianism is due to Medical or Pyschological reasons is your own problem.

    Don’t TRY to replace Tradition with your mental disorder.

    If you have a great recipe for Corn Chowder, GO with it. I prefer Chicken Corn Chowder.

    But to replace Traditional Favorites with a Psuedo Replacement, will NEVER, I Say again, NEVER hit the mark.

    Trying to imitate the original is like trying to make spaghetti sauce with NO tomatos. It IS NOT the same.
