Tex-Mex Sloppy Joes: Dinner for $10

Last week here at Dinner for $10, we promised we’d be bringing you quick, healthy budget-friendly recipes all through the month of January — yet here we have a big, meaty, sloppy sloppy joe. What gives?
Well, this isn’t any ordinary sloppy joe. It’s made with lean ground turkey (or ground chicken, your choice), which cuts the fat content down considerably to just 6 grams per sandwich. That’s less than half of what it would be if you made it with traditional ground beef. But because this Tex-Mex version is so flavorful, what with the sweet pepper, corn and medley of Southwestern spices, you likely won’t miss the fat at all. Even better, this recipe yields 6 servings at just $1.61 per serving!
