No-Bake Tamale Pie: 30-Minute Meal
Whenever we hear “no-bake” these days, we pay attention. And when that phrase happens to be attached to a Mexican dish, we’re even happier. In fact, we can’t think of a better quick and easy one-dish dinner on a steamy summer night than this no-bake tamale pie — ready in just 30 minutes.
The secret of this family friendly, crowd-pleasing tamale pie can be found in the easy to combine ingredients, like meaty tomato sauce, canned diced tomatoes with green chilis, and frozen whole kernel corn (although we might cheat here and use fresh sweet corn, such a wonderful staple of the summer season).
Prepared polenta is another key ingredient, as is cheddar cheese —essential for any great Mexican dish — but you can lower the calories by using a reduced-fat version, which we think works just as well.
