If cooking is an art form, then summer vegetables and fruits are surely the best artist’s tools available. And summer salads are the best way to showcase the beauty of the season’s bounty. The bright colors and flavors of summer veggies and fruits are delicious on their own, but when combined in a salad they really shine.
As you’ll see from the recipes here, a cool, light summer salad can be much more than just lettuce and dressing. In fact, each of these recipes is a whole meal in itself, and is perfect for those sweltering nights when turning on the the stove just isn’t an option. We love the summer layered chicken salad, chock full of sweet strawberries. There’s also a delicious beet summer salad that’s just as beautiful as it is healthy. The simple heirloom tomato salad is a gorgeous way to showcase garden-fresh tomatoes.
