Brain freeze — really, it’s a small price to pay for the thrill of that first cold, sweet bite of some delicious treat that’s just emerged from the freezer. We’re not ashamed to admit that we’ve even been known to lean in a bit in our anticipation and enjoy the frigid waft of white vapor as it steals from the surface, the summertime equivalent to taking in the aroma of a slow-cooked stew come winter.

 

Ugh! It gives us the willies just to type the words “slow cooker” while it’s so hot outside. No, we’ve got an appetite for all things chilled right now — especially if they’re dessert. Nothing makes for a more satisfying end to a summer day than enjoying spoonful after spoonful of something cold and delicious while the cruel old sun slips toward the horizon.

 

With the mercury rising, we thought we’d turn to some of our favorite food bloggers to see what they’ve got tucked away in their fridges and freezers this season.

 

 

 

 

 

 

 

 

 

 

 

 

 

Just the phrase “ice box pie” makes us happy, conjuring up some sort of old-timey summer’s twilight (fireflies, rocking chairs, big front porches — all that). There’s something kind of classic about good old s’mores, too, but unless you’re away at summer camp up in the northern woods, who wants to build a bonfire? Ingredients, Inc. came up with this ingenious way to enjoy all the flavor of traditional s’mores in an ice cream pie.

Bake at 350’s Kalhua-Coffee Ice Cream Cake comes with the sort of advertisement we love in July: “no oven, no stove top and no mixer.” It doesn’t hurt that it looks delicious, to boot.

The White Chocolate Raspberry Tart from Have Cake, Will Travel is the epitome of summertime simplicity—simple, fresh flavors. We might just be tempted to take their suggestion and forego the crust: the chilled filling would be great with just the fresh raspberries!

Just because it’s summer doesn’t mean we’ve lost our appetite for chocolate. This chilled Chocolate Mousse Tart with Hazelnuts from Eats Well with Others stands to satisfy our cravings no doubt.

What’ summer without ice cream! While we’re not going to diss the simple flavors like vanilla and strawberry, sometimes it’s good to shake things up. Here are two of the most original ice cream flavors we found on our blog hunt.

 

First up, the folks at Shockingly Delicious live up to their name with this Avocado Lemon Grass Ice Cream (yeah, give your mind a minute to mull it over — sounds super weird at first, and then you go, “Hmm … I wouldn’t mind a bite of that.”)

But for sheer dreamy decadence, we’ve got to give it up for Tartelette’s Roasted Peaches and Lavender Ice Cream. It’s already on our make-it-one-day bucket list.

What is it about ice cream on a stick that brings out the kid in just about everyone? Trade your Bomb Pops for one of these eye-popping delights. Either the Raspberry Cheesecake Popsicles from The Novice Chef:

Speaking of Better Recipes, here’s another ridiculously easy (and ridiculously delicious) dessert: Floating Fruit Cobblers! We’ll pop fresh blueberries all day long, so any new way to use them has to be better than that, and this looks perfect!
