A good cheesecake can be hard to find. Too often this dessert is a dense, heavy brick — more like a wedge of actual cheese than an airy yet creamy treat.
But really good cheesecake (the kind that puts you in a kind of heavenly, close-eyed daze at first bite) is actually one of the most delicious desserts ever concocted. When made right, the smooth texture and sweet flavors of a good cheesecake are unbeatable. It’s scrumptious just plain, of course, but why not gild the lily with any number of seasonal toppings, add-ins and clever crusts?
