But just what kind of a dish is this?
Stir-fry sure sounds like our favorite kind of Chinese food. Spicy shrimp makes us think Cajun or even a little Mexican. Grits (see “Southern”). The whole dish is finished with colorful bell peppers and a tangy cilantro vinaigrette that also hints at something South of the Border.
But, frankly, we don’t care where this dish comes from. We simply love the fact that it’s such a crowd-pleaser (just ask your family after they sampled Stir-Fry Shrimp with Cheesy Grits) and that it’s so darn easy to throw together. What more could you ask of a recipe on a busy weekday night?
