Spinach and Swiss Quiche: Dinner for $10

We love quiche. Not only do we love the timeless pairing of golden flaky pie crust with savory egg filling, we love that the French came up with a monosyllabic name that’s better than “egg pie.” Quiche. It almost rhymes with “chic.”
Which is somehow fitting, because there’s something très chic about a buttery-hued quiche just pulled from the oven, even one that’s as simple to prepare as this one (3 easy steps, we kid you not). Très cheap, too — though you’d never know it. This classic quiche, chockablock with antioxidant-rich spinach, yields 6 servings at just $1.15 per serving.
That’ll leave enough left over for a nice glass of sauvignon blanc.
