Shrimp BLT with Pesto Mayo RecipeHere’s a variation on the classic BLT—a shrimp BLT with pesto mayo and bacon—that’s maybe more exciting, certainly just as easy to make, and possibly even a bit healthier. Yes, we still use bacon (it wouldn’t be a BLT without bacon, but we like turkey bacon in this particular sandwich). The shrimp gets dressed with a light mayo containing basil pesto, and the whole combo rests between slices of whole wheat toast.

 

Sometimes, a standard BLT leaves us feeling like we haven’t had quite enough to eat. Not so with this shrimp BLT with pesto mayo version. The shrimp adds some heft to the sandwich. The pesto mayo, although light, imparts a satisfying flavor. And since the shrimp is cooked under the broiler, the sandwich feels as much like the perfect summertime main course for dinner as it does a lunchtime treat. If you’ve got any leftover potato salad, serve that as a side. Or slice up some extra tomatoes for a quick little salad; toss on some fresh basil from your garden.

 

You won’t settle for just any BLT once you’ve tasted this shrmp BLT with pesto mayo—all yours with just a tiny bit more effort but still clocking in at 30 minutes.
