Sausage, Greens, and Beans: 30-Minute Meal

Greens and beans sautéed in chicken broth and a splash of white wine is a classic Italian dish that combines the best of fresh and dried produce. Served as a first course or a side dish (or as a vegetarian main dish, when made with vegetable broth), this hearty combination can’t be beat.
But maybe you’d like a little more oomph to the traditional veggie side. Take it a step beyond by adding hot or mild Italian sausage to create a spicy main dish, as we do in this Sausage, Greens, and Beans recipe.
All you need is 25 minutes, from cooking the sausage and onions to adding canned white beans, escarole or spinach (your choice), broth (chicken or vegetable), wine, and thyme (fresh or dried), and letting the whole thing simmer. Ladle this beauty of a stew into bowls and grace the top of each with a sprinkling of Parmesan cheese.
