roasted pork tenderloinWhat’s in a name? That’s easy when you’re talking tenderloin. It’s the the most tender cut of pork. And it roasts to perfection in under a half hour.

Pork tenderloin is a low-fat choice as well. Serving per serving it’s about the same as eating a boneless, skinless chicken breast. Yes, that’s the whole idea behind the pork producers’ “other white meat” ad campaign.

The key to cooking pork tenderloin (because it’s so lean) is not to overcook it, which would dry out the meat. This recipe is ideal, as you simply brown the pork in a frying pan and then roast in the oven for about 15 minutes. Of course, you want to make sure to cook it thoroughly so that no bacteria is present. Use a meat thermometer to make sure the pork’s internal temperature is at least 155 degrees before you remove it from the oven.

Moist and tender, this tenderloin then pairs up nicely with a fruit chutney.
