Chicken quesadillas are the whole family’s favorite, especially the kids. But why does it always have to be takeout? The truth is, this is one of the most popular Mexican dishes but also one of the quick and easiest to make. And it tastes every bit as good as what you send out for from the neighborhood cantina on the corner.

Chicken Quesadillas: Make the TakeoutHere’s why: This chicken quesadilla with peppers recipe uses authentic Mexican cheeses — like asadero, Chihuahua, or queso quesadilla — to give it a super authentic flavor. (Don’t have it? Don’t worry: Use Monterey Jack.) A little fresh cilantro, some Anaheim or green chilis, and chunks of ripe fresh avocado — and presto! You’ve got real Mexican quesadillas ready to serve on even the busiest weeknight.

That’s right! These beauties are ready in only 23 minutes, faster than it takes for the delivery to arrive. Oh, and don’t forget to chop up some gorgeous fresh tomatoes (a primo ingredient in refreshing Mexican salads, too) to sprinkle across the top of these cheesy chicken quesadillas with peppers. Careful, though, that the neighbors don’t start calling you to order in from now on.
