Pumpkin Coffee Cake

After nearly two years of cooking with my kid(s), I’ve discovered one thing that works like a charm—every time.  Repetition.  Sure, you may be reading this and thinking, “Tell me something I don’t know; my kid wants chicken nuggets and plain pasta every night.” But hear me out.

 

If I want to try something new with the kids, I make a point of saying we’re making something we’ve made before, only with a slight variation. Here’s a perfect example: I wanted to try out this Pumpkin Sour Cream Coffee Cake recipe (yum!), but my kid reeeeeallly wanted to make pumpkin bread. This is where the Jedi mind trickery comes in – “Honey, I know you want to make pumpkin bread, but remember the coffee cake muffins we made last week? This is a cake version of them but with pumpkin.” SOLD.

 

Ok, so now you’re thinking “Um, of course you were able to convince your kid to bake a cake. It’s cake!” I’ve got news for you: 1) it’s not easy to convince a five-and-a-half-year-old to do anything he doesn’t want to do, and 2) it totally works on other foods, not just cake!  Hmmm… now all I need to figure out is how to make a variation on escargot.
