Pumpkin Party! Family Recipes for Pumpkin Lovers

Once I go pumpkin I never go back… or at least not until after bathing suit season. The beauty of cooking with pumpkin is that with canned pumpkin there is always a little left over, so you have to use it up in your next recipe—and the cycle continues.

 

Thankfully, pumpkin-positive taste buds were passed down on both sides of the family (my husband is fanatical), so my kids both have the gene for pumpkin loving. Hence, they do not reject the nonstop barrage of pumpkin-related foods that hit the table.

 

This morning, for example, we started the day out right with some seriously awesome pumpkin pancakes. We modified the recipe a bit, using 1 cup whole wheat flour and 1 cup regular flour. We also used lowfat buttermilk instead of regular lowfat milk and real eggs, not “egg product.” We skipped the orange syrup and opted for maple. What can I say, we like to tinker! (And that’s the beauty of cooking—you can make each recipe your own.)

 

 

My almost-six-year-old loves to be the pancake flipper (closely supervised, of course) and my daughter likes to eat the little drippings that unwittingly become itsy bitsy pancakes. My husband and I like pretending that pancakes have no calories.
