Cheesecake and Pumpkin Fall in Love

pumpkin cheesecakeMy husband and I aren’t hosting the Thanksgiving feast this year, but I’m already thinking about dessert. We’re going to a new relative’s home to celebrate, and, to me, that calls for contributing something special … way beyond pumpkin pie. When I think rich and over-the-top, I think cheesecake—my husband’s favorite dessert, and one I’ve managed to make only about once a year. And I’ll do it with pumpkin, for a great seasonal touch.

 

You might think that cheesecake is too heavy to end a large holiday meal. But since each bite is so rich and creamy, you’re naturally satisfied with less. And at just a sliver per person, each cheesecake will go further—it will feed more people for less  than the cost of making multiple desserts. (Of course, you could always eat less turkey and more cheesecake, or make more than one cheesecake so you’ll be sure to have plenty of leftovers.)

 

Some cheesecake recipes just say fall, and I’ve picked maybe the most autumnal of them all. Blending the wonders of a pumpkin pie with a classic cheesecake, this Pumpkin Cheesecake hits all of the right notes, with a bonus caramel swirl and a gingersnap crust.
