Pork Chop on a Stick: Iowa State Fair Food
Sometimes, less is more. Nothing proves that better than the Pork Chop on a Stick at the Iowa State Fair.
Out in back of the booth (not surprisingly, sponsored by the National Pork Board, ) was a giant, portable pork-chop rotisserie, merrily rotating and roasting hundreds of boneless loin chops — all perfectly browned, perfectly tender, and perfectly moist.
Everyone, including my friends and I, were making the same “mmmmm” noise after biting into one of these gorgeous chops. Our mouths were too full of pure pork joy to actually express in words how good they were.
No doubt about it, the Pork chop on a Stick was one of the big winners at this year’s Iowa State Fair. And, compared to many of the other, often fried foods there, pork chops — on or off a stick — are downright healthy.
