Pecan Pie: Go Nutty

Pumpkin pie might get the lion’s share of attention around Thanksgiving, but in many households, it’s pecan pie that reigns supreme. A perfect pecan pie is all about balance—just enough sweet, sticky filling to offset the buttery richness of the pecans. When you’re making any pecan pie recipe, it’s important to use fresh nuts—some supermarket varieties sit on shelves for months, so try a quick nibble before you add them to your bowl.  (Those of you who live in the South and can get pecans right from the tree, thank your lucky stars!)

 

The secret to pecan pie is corn syrup. Sugar won’t do the trick here, because it crystallizes. Corn syrup is a suspended solution of dextrose and other sugars, so it won’t convert into those unappealing gritty sugar crystals. (This isn’t high-fructose corn syrup, by the way.) Mixed with a hint of vanilla and often a touch of bourbon, it bakes up sweet, gooey and delicious.
