We like a quick and easy casserole that also includes vegetables — in this case, broccoli and cualiflower — because it means we’re cooking healthy as well as fast.
And this beautiful Pasta Bake (click here for the recipe), is a classic. It’s done in only 25 minutes, and it serves six. (Yes, we’re already having thoughts of doubling the recipe and setting this out on the holiday table — why shouldn’t Thanksgiving be quick and easy, too?)
You simply can’t go wrong with this Pasta Bake, so rich and cheesy from part-skim mozzarella and with a kick from grated Parmesan. Elbow macaroni and tomato sauce top off the dish, possible the ultimate winter warmer on a busy week night when you don’t have a lot of time to spend in the kitchen but still want to put something nutritious and delicious on the family table.
