Quick, simple and delicious, is there anything more perfect than pancakes for breakfast? Why yes — pancakes that feature the best of summer’s seasonal fresh fruit.
Whereas come those cold, gray winter mornings we’re happily content to top our pancakes with butter and warm maple syrup, in summer we go wild for all manner of summer fruit: strawberries (check), peaches (check), raspberries (check). And, of course, let’s not forget about the hands-down favorite: blueberry pancakes (we’ve got three variations alone here, from a show-stopper oven-baked Dutch pancake filled with fresh blueberries to a healthy, hearty buckwheat version).
So what are you waiting for? Stock up on the freshest summer fruit you can find and make one of these pancake recipes for breakfast this weekend. (Or what the heck, go crazy and serve them for dinner — we guarantee you’ll get no complaints!)
Buttermilk Pancakes
Here they are: the classic buttermilk pancakes. The star ingredient makes for incomparably moist, delicious pancakes, with just that little hint of sour that complements the sweetness so well. Top them with any number of fresh-made seasonal sauces or jams, such as strawberry, blueberry or peach.
Blueberry-Ricotta Pancakes
Blueberry fans, we’ve got the pancakes for you! Loaded inside and out with fresh blueberries, these pancakes are extra rich and moist, thanks to the addition of ricotta cheese. (Click here for the blueberry syrup recipe.)
Blueberry Buckwheat Pancakes
These pancakes are made from whole-grain buckwheat and whole-wheat flour, which not only makes them super healthy, the added heartiness of the grains gives heft to the blueberry-rich batter.
Blueberry Dutch Babies
What a treat for a summer brunch! These pancakes, baked in skillets in the oven, are a unique way to showcase the season’s harvest of fresh blueberries. A dash of lemon zest in the batter enhances the berry flavors.
Seared Peach Pancakes
Slices of fresh peach (or nectarines or apples, whichever you’d like) are simmered in the skillet first to double their sweetness then covered in batter and cooked into the pancakes for an excellent summertime treat.
