Easy New Year’s Resolutions: Fry Your Chicken—in the Oven!
Crunchy, moist and delicious, chicken cooked up in the frying pan is a pretty hard dish to give up. But you can have all the flavor minus half the fat if you ditch the bubbling oil on the stovetop and oven-fry your chicken.
Go ahead and dip the chicken in buttermilk and coat it with a mixture of flour and spices (such as garlic, paprika and thyme), just as you would for traditional fried chicken. But then spay a baking sheet with vegetable-oil cooking spray and bake the chicken at 425˚F for about 45 minutes.
If you want to really save calories and fat, remove the skin, or opt for white meat only.
