Omelets have a lot going for them: they’re economical (what better vehicle for leftovers?), they’re easy to make, and perhaps most importantly, you most likely have everything you need to make them on hand. Eggs pair well with a wide variety of ingredients, from vegetables like spinach and asparagus to meats like ham and turkey. (Be honest — who doesn’t like bacon in their omelet?)
Don’t get too worked up about technique. The most important thing is to ensure your omelet is cooked through, so don’t add too much filling to runny eggs or you’re going to end up with a goopy mess. Keep the heat low and watch your omelet carefully — the lightly browned edges will speak to you when it’s time to flip. And have fun! You can play with ingredients until you find a combination you love.
