chicken and rice recipeChicken, beans and rice — there’s comfort in simplicity, and we think there’s a lot to be said for getting back to basics. But basic doesn’t have to mean boring.

Take the white rice in this Mexican Chicken and Rice. Now, plain old long-grain white rice isn’t something that typically sets your heart aflutter. But instead of cooking it in water, try simmering it in a mix of chicken stock, cumin, onion and green pepper. It hardly takes any more time, but — bam! You’ve just taken white rice from wimpy to wow. Stir in some kidney beans and chicken breast, and you’ve got yourself a one-dish meal that’s as simply satisfying as it is simple. The math is pretty simple, too. This Mexican Chicken and Rice recipe yields 5 servings at $1.67 per serving.
