Make Mine Meatless: Tasty, Healthy Main Dishes

One of my goals for the new year is to cook one meatless dinner per week. Recipes like Greek Quinoa with Avocados make it easy to stick to that goal.

 

Why the push for meatless? Consider this…

 

1. Meatless doesn’t mean flavorless. Recipes like Greek Quinoa with Avocados, which combines nutty quinoa with juicy tomatoes, zesty red onions, creamy avocados and salty feta cheese, make for bold, flavor-packed meals.

 

2. These vibrant and colorful dishes, such as Vegetarian Chili, are loaded with vitamins, minerals and fiber, and are lower in fat and cholesterol than meat-based meals.

 

3. You can save a lot of money! A one-pound package of ground beef that serves a family of five costs, on average, $4 at my local grocery store. A one-pound box of quinoa costs the exact same, but serves 11. That’s double the bang for your buck!

 

I like to make recipes like Greek Quinoa with Avocados for dinner, then pack the leftovers to enjoy for lunch during the week. It’s quick to cook, filling, and extremely satisfying – even without meat!
