Their nutty flavor and firm texture give a soup body and make them a trusted partner for vegetables like tomatoes, carrots, and celery. Lentil soup is a winter staple, and we’ve got some ideas for you to cook it up in its classic form and to see it in a whole new light.

 

First, let’s talk lentils. They come in many shades and varieties, from darkest black beluga lentils to white urad dal. For soups, we recommend you use traditional brown or red lentils or French green lentils. Although pink lentils are beautiful and delicate, they tend to cook quickly and turn a bit mushy.
