Put this elegant lamb-chop dinner together in 30 minutes? No way! Well, we’re here to tell you that not only is it absolutely doable, this combination of Herbed Lamb Chops with Greek Couscous Salad creates one stunningly fresh spring meal.
Lamb-shoulder chops are deeply flavorful, but they also have a higher fat content than the lamb-loin chops used in this recipe. When rubbed with a mixture of parsley and garlic, which is pressed into the chop while the meat cooks, these chops have double the flavor.
While your lamb chops are cooking, prepare the Greek couscous salad (a grand total of 5 minutes cooking time, plus prep), and then mix it with chopped tomatoes, cucumber, feta, lemon juice, and dill. And if you really want to save time, make the salad the day before and keep it in the fridge until you’re ready to serve it.

You only have to be conscious for the salad?
I didn’t have couscous in stock so used barley – Superior!
