Rainy-Day Kids Snack: April Showers

It’s been raining the last few days here, which is what inspired this fun kids snack (or even lunch). Being cooped up inside, I thought I’d get creative with goldfish flowers, string-cheese clouds and sunflower-seed raindrops (it was either that or play yet another round of Candy Land!). The results brightened up an otherwise gloomy afternoon, and as I reminded my girls, let’s not wish the rain away because, after all, April showers bring May flowers!
What You’ll Need:
spinach tortilla
1/4 c. shredded cheese
multicolor goldfish crackers
lunch meat
string cheese
sunflower seeds
To Make April Showers:
Warm a skillet over medium heat. Lay the spinach tortilla in the skillet, sprinkle the shredded cheese on one half and fold the tortilla in half. Once cheese is completely melted, put quesadilla on a plate. Slice string cheese crosswise and arrange on plate for the clouds. Arrange goldfish crackers into flower shapes, using green goldfish for the leaves. Cut strips of lunch meat for the flower stems. Arrange sunflower seeds on plate for the raindrops.
