Soaring Kids Lunch: Kite Sandwich

Nothing says spring like a crystal blue sky, a stiff breeze and a soaring kite darting through the air. Now that the days are getting longer, we’re looking forward to some after-school outings in the park on those days when the weather is too perfect to stay inside. But of course, the other thing about spring is the changeable weather. So when those gloomy April showers have you cooped up, you and your kids can still have some wholesome fun with this (edible) kite! It’s easy breezy!

What You’ll Need:
1 sandwich (your choice)
1 celery stalk
2–3 baby carrots
string cheese

To Make Kite Sandwich:
Cut a kite shape out of the bread and make any sandwich you would like. Cut the string cheese in half lengthwise, then cut strips to fit kite dimensions. Peel a strip of celery for the kite tail. Cut baby carrots into triangle pieces and put in place for the tail bows. Arrange on plate and enjoy.
