40 years ago, a restaurant in Fountainbridge, Edinburgh called “Vito’s” made a dish he called Pollo Sopressa. breast of chicken stuffed with mozzarella, served with a white wine and cream sauce with Maraccino cherries. It was divine but search though I might I’ve never encountered it in any other italian restaurant. Help?
