Ice Cream SandwichesYou’ve got cookies. You’ve got ice cream. You put them together? That’s a match made in frozen treat heaven, our friends. Honestly, if your mouth doesn’t begin to water and your stomach doesn’t start to grumble at the thought of an ice cream sandwich — well, we have to wonder if there’s something seriously wrong with you.

And, it seems, we’re not the only ones salivating over the delicious dessert. Nation’s Restaurant News reports restaurants are putting a creative spin on the ice cream sandwich, adding everything from booze to fruity flavors to piece together some tempting summer eats.

In New York City, you’ll find a mudslide ice cream sammie at Dizzy’s Club Coca-Cola with bourbon pecan ice cream smeared between two chocolate cookies. Cheers to that!

Boston’s Island Creek Oyster Bar lets you finish your meal (or — we don’t judge — start it off) with a cherry ice cream sandwich, complete with a cherry garnish and served with triple chocolate mocha cookies. Gulp.

At New York City’s Recette, you can sample a confection with chocolate meringue on the outside and salted pistachio ice cream and cherry jam on the inside, while Jasper’s Corner Tap & Kitchen in San Francisco serves up coffee toffee ice cream between chocolate cake layers that have themselves been dipped in chocolate.

Not drooling or trying to quiet your tummy gurgles yet? NRN turns our attention to the Elvis. That would be a “healthy” ice cream sandwich featuring banana frozen yougurt served between peanut butter cookies.

Clocking in at just 310-calories, we may just get two. And for that we say “thank you.” Thank you very much.
