The best thing about having ham for Easter dinner? Well, ham. But the second best thing? Leftover ham! And no, we’re not talking about reprising your Easter dinner for the next three or four nights.
Sure, thick-sliced ham on a hoagie roll makes for a great sandwich, but after putting in all that work making the holiday dinner, why not put your leftover ham to work for you? Not only are these three dinner recipes featuring leftover ham diverse (you could probably make them three in a row and not feel like you’re having ham night after night), they’re eminently easy, too. Just 20 minutes each ’til dinner’s on the table.
1. Ham and Corn Tostadas
Everyone’s tempted to hit the fast-food drive-thru the day after a big holiday. But it’s not hard to resist that urge with this cheesy (and easy) tostada.
2. Creamy Ham and Penne Pasta
Reduced-fat cream cheese makes for a healthier but no less creamy sauce in this quick pasta dish.
3. Ham and Cabbage Hash
Fresh carrots, cabbage, onion and potatoes combine with ham (and a dash of Worcestershire sauce) to create a hearty one-dish meal.
