Whereas ground beef once reigned as the champ when it came to easy weeknight dinners, today ground turkey is giving it a run for its money. It’s not surprising, really. Ground turkey can be a healthier alternative to ground beef (but it needs to be lean ground turkey), and because turkey has a lighter taste, it allows other ingredients to share the spotlight. Not only that, but ground turkey cooks up just as fast as ground beef, making it a perfect substitute in many dinners, like beef stroganoff, that once were regulars on our mothers’ weekly rotations. This stroganoff isn’t the one your mom used to make: here, the mushroom sauce is just a creamy, but the ground turkey replaces the beef and gets a kick from a medley of spices, like paprika, thyme and a bit of fresh parsley.
