Prettiest Easter Cakes in the Holiday Parade

Halloween might get all the credit when it comes to sweet holidays, but Easter is no slouch when it comes to treats. And while everyone loves brightly colored jelly beans and marshmallow chicks, candy isn’t exactly appropriate for dessert after the big Easter meal. No worries—cake to the rescue! We’ve got seven cakes designed as a grand finale to Easter dinner, whether you’re shooting for something to delight the kids (cheerful little cake bunnies) or something more elegant (our ethereal lemon meringue cake will lift your spirits).
Two of these Easter cakes—the spring daisy cake (pictured here) and the sunshine cupcakes—require a bit of skill to achieve the gorgeous icing design. While they’re definitely worth the effort, if you’re nervous about attempting them, opt for the equally beautiful Easter basket cake: its good looks are the result of a few scrapes of a fork and a little ingenuity.
A garden grows in your kitchen, with this Spring Daisy Cake, pictured above. If you have a set of piping tips and steady hands, it’s no problem to create this amazing homage to spring. The flowers are made of fondant and completely edible!

Coconut Cake: This cake is for coconut lovers only! There’s flaky coconut in every possible incarnation here, from the filling to the cake layers to the sweet, creamy frosting. And although you might think that the flakes on top gild the lily, we say you just can’t have too much coconut!

I cannot wait to make the carrot cake recipe. In the past, I have only purchased the cakes already made, or, purchased carrot cake box mixes. This recipe sounds absolutely delicious! I am also very impressed by the use of the fondant in the Spring Daisy cake. I have used fondant once, or, twice before, but, not in this way, just rolled out flat for a cake icing. I cannot wait to make this recipe!!! Thank you for sharing!!!
I have made MANY bunny cakes! They are always fun. Like to sprinkle them with coconut for the “fur!”
